I have a 2020 Jetta with no functioning Ac.
I had difficulty finding a shop to service the 1234yh refrigerant so I ended up at the dealer.
The quote was 4500 dollars Canadian.
Well i guess I am rolling the windows down.
Not surprised about the difficulty finding a shop that could handle R-1234yf ...

In view of the high mileage, and because we don't know the service history of this vehicle, I wouldn't bother with the OT and accumulator unless you're just curious. A couple of additional observations and suggestions:

1. Never "jump" anything, especially by forcing the compressor to run.

The main problem with that is oil circulation. If the system is below the pressure threshold for the compressor to engage, by jumping it, you're also forcing the compressor ...

Two potential issues come to mind:
1. Double-check that your Manifold Gauge Set is hooked up properly and that the yellow hose is oriented correctly. Some hoses have check valves in them, and if reversed, they won't flow.
2. You didn't mention the accumulator, which might be saturated with moisture ...

Your condenser might be appropriately sized as well.

In my car, I believe that Toyota used a serpentine condenser and R/D left over from their R-12 vehicles, and they cooled just fine for more than 29 years using R-134a.
