No Clutch/Can the system still be evacuated

So somehow the compressor clutch sheered off (missing fender splash guard I am sure had something to do with it) and I need to replace the whole compressor.
There is no way for me to check the Freon level without professional gauges. Can the system still be evacuated?

Yes, the system can still have the refrigerant recovered.
