Torque isn't a big factor with these style connections. It does matter since you have to axial compress the seals, but since the sealing element will expand axially when under pressure, they can sometimes seal with almost finger tight. Oem systems use what is in effect a thermostat. There is a thermistor probe either in air or fins on the outlet face of the evaporator. Computer reads the temperature and decides when to cycle.

Agree, left valve is lower cost, less aluminum, eliminated dome insulation. These things happen over the lifespan of a vehicle model. The suppliers agree in advance to a certain level of cost reductions year over year. I doubt there is any noticeable performance difference

With a truck that old, you might not have a leak that can be found, might just have normal leakage. All AC systems leak with time, this is normal.

You are just low on refrigerant. Have the existing refrigerant recovered, have it charged to the weight listed on your under hood sticker.

There shouldn't be a temp drop through the receiver, the filter in there is clogged, liquid line is bubbly. TXV can't work correctly unless it gets mostly bubble free liquid.
