I replaced the compressor a month or so ago because the seal was leaking and the compressor was getting noisy. Now I found leak in the evaporator. I have replaced the evaporator, orifice tube and the accumulator. I want to pull the compressor, drain and refill with the correct amount of oil. How much and what type oil needs to go back in the system?

Your vehicle calls for 7 oz of mineral oil. Since it has been converted. I would recommend using our BVA Auto 100. In order to get the correct amount though, you are going to have to flush the lines as well as the condenser to remove an oil in those components. Failure to do that will surely results in less than perfect A/C performance. You can't really hurt a compressor by having a little too much oil, just the performance of the system.
