Jensen Interceptor's are quirky. Given the pressures and temps you are listing at 68f ambient I would suspect reheating or there is an obstruction someplace. Likely some of each. The short answer to the OP's question is it simply will not cool when overwhelmed. As DetroitAC knows very well, the big issue today is marketing and the bean counters making engineering decisions. So at least both inlet and outlet on passenger side. Probably not going to find one with the drop tube, so a 90 degree fitting on the inlet will get the hoses pointed at the stock routing. Early Camaros had that little square crossflow radiator as I recall. Do you have room for a 25" wide condenser core? What about height?

If you can measure the core size on the radiator that would help.

Cooling systems where the bypass runs through the heater core should not be blocked with a single valve. Your pressures and charge level look pretty close. I would expect a high side between 200 & 220 in those conditions @ 1500 engine rpm. The 35psi low side indicates a refrigerant Temperature around 40f So I would suspect reheating or air bypassing the evaporator with vents nearly 20 degrees warme...
