Ok so i had to replace the condenser because a goofball i work with was swapping the radiator and damaged the condenser in the process. As far as i know there was no prior issue with the ac. So after installation and a full charge its not blowing cold and at 2000 rpm with everything running full bore, my low side almost pulls into vacuum while my high side gauge dances erratically between 125psi to 200psi. What's the deal here guys?

If it's dual air, make sure there is NOT an orifice tube in the condenser outlet fitting. New condenser may have come with one already in it.
No it's only got front air. It's just kinda weird, the system was working fine before and all i did was swap the condenser. It's got me pretty puzzled.

Is it plumbed correctly? Older models were possible to plumb backwards- can't recall the envoys..but compressor always feeds top of condenser- so liquid can flow to bottom and pass through OT....

The number one A/C diagnostic tool there is- is to know how much refrigerant is in the system- this can only be done by recovering and weighing the refrigerant!!
Just a thought.... 65% of A/C failures in my 3200 car diagnostic database (GM vehicles) are due to loss of refrigerant due to a leak......
It appears to be a CCOT system, so the switch should be cutting the compressor off before the low side goes below 20. Do you know for sure that it was actually working before the condenser got damaged?
