thermostatic switch

I was doing some work on my Pup and had to remove the evaporator and while I had it out, I thought that I would check the thermostatic switch to see where it was set. I also had another one so I set up a jar full of ice water. One tripped in about 3 to 4 seconds when the probe was put in the water. The other one wouldn't trip. So I put some salt in the water and the temp dropped to about 26 degrees. The second one then tripped after several seconds after being put in the 26 degree water.. Which one should I use and what are they suppose to be set at.

Should open at 33*F, then close again when warmed up to 39*F. Like to tape a temperature probe directly to the capillary tube so know the temperature switch points.
